I tried to make cake pops about two years ago, on Halloween. My idea was to make some cute little pumpkin cake pops for my kids and their friends. It did not go well. My cake balls fell apart when I tried to dip them into the luminous orange flavoured melted chocolate. I never thought cake pops could make me swear so much. They look so easy! So I gave it up as a bad job and decided I would try them again when I wasn’t so stressed.
I first came across this recipe on Miss Chris Creations for red velvet truffles and I loved the idea. I actually forgot all about them until I made the red velvet cupcakes yesterday. I made four little cakes in a heart shaped silicone tin but once baked they refused to come out of the tin in a whole. So I was left with a lot of red velvet cake crumbs and 175g (around 1/2 cup) of cream cheese icing. Which turned into these yummy delights….
The boys enjoyed helping me with these. It was fun but messy! I discovered the secret to successful cake pops…the freezer! If you follow this easy tutorial you can’t go wrong. I didn’t have any foam to stick the cake pops in to let them dry…so I just used my colander (turn it upside down.) The holes were just the right size!

Your favourite vacation spot: I don’t really have one to be honest…I’ve never had the opportunity to travel abroad…maybe one day! But the area I live in is so beautiful in Summer I don’t think I’d rather be anywhere else with my children. Having said that I would love to visit Italy one day.
Shopping or blogging: Shopping, especially if it involves kitchen equipment/baking/cookbooks!
How much time do you spend blogging: Around one hour a week on average. I’m sure I spend longer reading my favourite blogs…hours/days have surely been wasted!
Favourite blogging memory: I don’t have a particular favourite. I’ve really enjoyed blogging since I made the move to WordPress. Best move I ever made for my little blog!
Whats your next post about: Possibly something involving a special Birthday cake…or bread. I’m on a real bread making kick at the moment.
