Don’t you just love it when you find a recipe that is so incredibly easy and quick to make yet ticks all the boxes on flavour? These ginger bars deliver in every way.
I found the recipe via David Lebovitz.com. A New Zealand lady apparently passed this recipe onto David at a book signing and told him it was amazing. She wasn’t wrong.
This is probably the quickest and easiest recipe I’ve made in a long time. But definitely one of the nicest traybakes/slices I’ve come across.
If you are a ginger fiend like I am, you HAVE to make these. You will love them. There is ground ginger in the buttery shortbread base and a hefty amount in the icing/topping which adds a lovely spicy warmth to all that golden syrup and icing sugar…heaven!
A word of warning….once you start eating these it is very hard to stop! David is not kidding when he states they are quite addictive. I would advise using salted butter for the shortbread base because a little salt really brings out the flavour of the ginger. If you don’t have any salted butter, just add 1/4tsp salt to the base. Next time I make these I might just add a little chopped crystalised ginger to the shortbread base or to sprinkle on
top for a triple ginger hit
