Hello! Hope you are all well and had a good week? This week saw the new term of school begin so back to our usual routine. I always dread the idea of getting back to normal after Christmas but once I get back into the swing of things it isn’t so bad. It’s actually kind of a relief to get back into some sort of routine.
It’s a cold, grey morning here so I thought I’d switch the oven on and do a bit of baking. I was flicking through my latest cookbook purchase, Dan Lepard’s Short & Sweet when a recipe for clementine and oat muffins caught my eye. I always go slightly overboard buying clementines over Christmas so I have quite a few left over and this was the perfect recipe to use them up. I usually end up making Nigella’s gorgeously moist clementine cake but I really fancied these muffins with my morning coffee.
They turned out really well, the only disappointment was that they were a little bit on the dry side. Maybe my oven was too hot or the fact that I used smaller muffin cases therefore taking less time to bake. But having said that, the flavour of these muffins were really lovely and the glaze on top was perfect. So I would definitely make them again. A lovely little morning treat that doesn’t feel too naughty.

What a great use of clementines. Personally, I don’t mind my muffins a bit dry as I only ever have them with a mug of tea so like the contrast!
